This is a secret-revealed. A decent recipe for Miso-dare (miso sauce) for Miso ramen. You can use this not only for Ramen but also for Mapo-tofu(Click for the recipe), stir-fried vegetables, marinating meat for Yakiniku and so on. Be creative and make your own dishes with this delicious sauce.
-INGREDIENTS-
175g Standard rice Koji Miso
175g Mugi Miso (Barley Koji miso)
50g Sesame oil
100g Garlic paste or grated garlic
100g Sake
25g Mirin
20g Fish sauce
100g Oyster sauce
20g Salt*20g MSG
10g Hondashi powder or Kombu dashi powder
20g Soy sauce
1/2 Ichimi Togarashi (Japanese chili powder)
1 Tbsp Roasted white sesame seeds
※Make sure to measured everything by gram, including the liquids. Use of an electronic scale is highly recommended.
-METHOD-
1. Combine all the ingredients well and heat in a non-stick sauce pan for 5 minutes on a low heat, stirring continuously. Turn off the heat and leave to cool down. Transfer it into an airtight container and store in the fridge. Use within two months.
